Healing in a Bowl: Immune-Boosting and Diabetic-Friendly Soup from Nature’s Harvest
There’s something sacred about walking through a farmer’s market. The colours, energy, and connection to nature remind me of how healing real food can be. This week, I picked up a beautiful bunch of fresh beetroot with their earthy stems and vibrant green leaves. While many people tossed the tops away, I saw treasure. These often-forgotten parts of the beet are packed with nutrients and offer profound health benefits.
Inspired by the abundance in my basket, I made a soup that was not only delicious but deeply nourishing—especially for those looking to strengthen their immune system and support blood sugar balance.
What Went Into the Pot?
The base of my soup was beetroot stems and leaves, which are known for their high levels of antioxidants, vitamins A and C, iron, and calcium. These greens are fantastic for boosting immunity and helping the body fight off inflammation and oxidative stress.
